

St. Patrick’s Day is all about good vibes, great company, and a little bit of mischief. And what better way to celebrate than with a brownie that’s as dark, rich, and boozy as the day itself? Meet our Guinness & Cream Cheese Brownie—a deep, malty, fudgy delight topped with a thick layer of tangy cream cheese frosting. It’s part dessert, part pint of the good stuff, and 100% guaranteed to make you feel like you’ve found the pot of gold at the end of the rainbow.
Now, we don’t usually hand out our secret recipes (we like to keep a little mystery, after all), but in the spirit of St. Paddy’s Day generosity, we’re letting you in on one of our favourites. It’s been a closely guarded secret for years, and trust us—once you taste it, you’ll understand why.
180g butter
180g dark chocolate (broken into chunks—no nibbling!)
45g cocoa powder
90g plain flour
3 whole eggs
300g granulated sugar
250ml Guinness (yes, you can have a sip, we won’t tell)
250g cream cheese (we recommend Philadelphia, because, well… it’s the best)
Icing sugar – as much as you like to sweeten the frosting (to taste)
and a baking tray lined with greaseproof baking paper.
The Method
Melt the butter and stir in the chocolate until it melts fully. The microwave is fine—just don’t let it explode.
Mix the flour and cocoa together. No sifting required, we’re not on Bake Off.
Beat the eggs and sugar together until they look slightly airy. We’re not making soufflé, so don’t go overboard.
Combine everything—melted chocolate mix, flour/cocoa mix, and eggs/sugar mix—until smooth. No lumps, no drama.
Pour in the Guinness and stir. Try not to drink it all before it makes it to the bowl.
Bake at 170°C for about 30 minutes, until the skewer test says gooey but not wet. Basically, like the perfect brownie should be.
Cool completely (yes, we know, the hardest part).
Mix the cream cheese with icing sugar until it’s just sweet enough but still has that cheeky tang.
Spread the frosting over the cooled brownie, slice it up, and try not to eat the whole tray in one go.
