Ultimate Mini Egg Brookie Recipe – Easter Traybake
Every year, the same thing happens.We buy a bag of Mini Eggs “for baking”… We eat half of them before the oven’s even preheated. And suddenly, the traybake never happens.

But this year? We’re doing things differently.

We’re going full-blown indulgent.
We’re talking layers of cookie dough, chunks of chocolate, swirls of smashed Mini Eggs and – wait for it – a secret middle layer of Bad Brownie Mini Egg Brownies.

Yes, this is happening.
Yes, it’s as outrageously good as it sounds.
Yes, you’re going to want to hide the leftovers.

(If there are any.)

🍫 What is a Brookie?

Only the best hybrid since the cronut. Half cookie, half brownie, all delicious.

And this one? It’s not just any brookie. It’s got a crunchy golden top, a gooey brownie centre, and a ridiculous amount of Mini Eggs folded through every bite.

We could call it a traybake.
We could call it a dessert.
We prefer to call it a public service.

What you'll need

Ingredients:

  • 550g plain flour
  • 2 tsp bicarbonate of soda
  • 1 tsp salt
  • 2 tbsp cornflour (for that chewy-soft magic)
  • 230g unsalted butter (melted)
  • 110g granulated sugar
  • 200g light brown sugar
  • 2 medium eggs
  • 2 tsp vanilla extract
  • 100g chocolate chips or chopped chocolate
  • 200g Mini Eggs – whole or smashed, up to you
  • 12 Bad Brownie Mini Egg Brownie bites – optional but highly recommended for ultimate indulgence
The Method
  1. LET'S GO:
  2. Melt the butter until it’s liquid gold.
  3. Whisk in both sugars until the mix looks pale and dangerously delicious.
  4. Add eggs and vanilla, and keep whisking like you're on Bake Off and trying to impress Paul.
  5. Fold in the flour, cornflour, bicarb, and salt – it’ll look thick, chunky, and ready for mayhem.
  6. Stir through half the mini eggs and choc chunks. Try not to eat it all at this point. Seriously.

THE MISCHIEF ASSEMBLY:

  1. Grease and line a square or rectangular tin with baking paper. No naked tins here.
  2. Spread half the dough on the bottom and smooth it out like you’re frosting your ex’s car.
  3. Press in 12 Bad Brownie Mini Egg Brownies across the surface – this is the gooey core of your masterpiece.
  4. Dollop the rest of the dough over the top and smooth it out until the brownie bits are hidden (for now).
  5. Scatter more mini eggs over the top – whole, crushed, whatever fits your chaotic baking energy.
🔥 Bake at 160°C for 20–30 minsUntil the top is golden, the edges are crisping, and your kitchen smells like heaven cracked open and dropped a traybake.
Now the hard part: LEAVE IT.

No poking, slicing, nibbling, or “just testing the corner.” Let it cool. Properly. We mean it.

🍽️ Devour it:

Once cool (or at least cool-ish), slice it up and serve with:

  • A scoop of ice cream (obviously)
  • A cup of tea or a glass of cold milk (classic)
  • Even more mini eggs (no regrets)

This is not a blondie.
